It’s right at the starting gate of Summer, and it is not the time of year to be preparing vegetable broth nor soups. But, I have the veggies (some fresh, some that *were* fresh, and are now frozen), and I have the proper spices, and I think it is time that I make a large batch (or perhaps more than one) of vegetable broth. I thought about it last night, and I decided that I will go about the method a bit differently this time. I will:nn- coat the bottom of the cookpot with an adequate amount of chopped veggiesn- fill the rest of the cookpot with watern- bring to a boil, then lower heat and let simmer for 45+ minsnnAs far as spices go, I will use simple sea salt, black pepper, and Cowboy Chili Mix (mostly cheyenne(sp?) pepper + paprika) in sparse amounts, because it is potent. And that’s all!nnThat’s it. Easy.
