The nurse that I saw the other day for my physical assessment said that since my cholesterol was so low (both GOOD *and* BAD cholesterol was very low), that I should implement (for now at least) some more fats + saturated fats into my diet. Vegetable oil (in moderation), raw olive oil (again, in moderation), avocados, peanut butter, etc. So, tonight (for Xmas Eve dinner), I made extra crispy fries, but instead of baking them, I fried just a small amount of them (1/5 of a bag, maybe) in vegetable oil on the stove. And they were delicious!
